Only put miso in liquid that is just off the boil or less.

2 pints vegetable stock or water or mix
8-10 shiitake mushrooms, stalks removed
2-3 green onions/scallions
3 tbsp dark miso, or to taste
1 tbps wakami or nori shredded
a few dashes of soy sauce
a few grates of ginger

Directions


Slice mushrooms
Add mushrooms, wakami/nori, soy and ginger to liquid
Bring liquid to boil in a pot
Boil 5-10 mins on medium low heat
Slice scallions and reserve
Then set on lowest heat
Transfer a ladle of liquid only to a small bowl, and make thick soupy paste of miso
Add miso mix to pot
Serve with sprinkle of scallions
