Servings: 4 Change to: US Metric

(butter, celery, dill, Garlic, lemon, rosemary)

3 lb milkfish, gutted, scaled and tail removed, head on.

2 slices lemon,
4 tbsps butter, softened
1 tablspoon garlic paste
Sprig rosemary
Stick celery
3 or 4 thick slices of leek
1 teaspoon dill

Directions


Mix softened butter with garlic paste,

Pat butter on to top of fish big chunks ok, then place in sous vide bag.
Put lemon slices on top of butter/bottom of bag.
Stuff fish cavity with rosemary, celery, leek and dill.

Seal bag.

Sous vide in large pot of water at 160 degrees for at least 40 minutes up to 2 hours.

Cut open bag and serve with lemon slice and over rice.
