For the Chow Mein:1 pound fresh egg noodles 5 tablespoons vegetable or peanut oil, or as needed 1 teaspoon Asian sesame oil 1 12-inch skillet with a non-stick coatingFor the heart:1 lb beef heart2 tbps Worcester Sauce1 tbps Steak Sauce1 tsp Tabasco2 tbps Soy Sauce1 tsp ground pepper5 tbps extra virgin olive oil1 tsp garlic powder, or 3 cloves garlic, crushed
Directions
Combine all sauces, pepper, olive oil and garlic in a large jar or 1 gallon bag as marinade.Rinse heart thoroughly in water, pat dry, then slice about 1/3 inch thick, (1cm or less).Cut into strips about 3/4 X 1 1/2 inches (2cm x 5cm)Place meat in marinade. Marinade should just cover the meat, discard excess.Leave in fridge for 2-5 hours or so.Meanwhile for the chow mein:Par boil the noodles to not quite al dente, stir lightly, with the aim of separating the noodles - add a little oil if that helps.Drain noodles, then cook in oil in pan until crispy - 5 mins. Then turn and repeat for other side.Remove noodles. To empty pan, add beef heart and marinade.Bring quickly to a boil, then simmer for 4-5 minutes.Serve over the noodles.
