(balsamic vinegar, cheese, clove, extra virgin olive oil, Garlic, mushroom, oregano, pepper, Peppers, red onion, salt)
2 round rolls 1 clove of garlic 2 few tablespoons of extra virgin olive oil 2 portabella mushroom caps, wiped down with a wet towel 2 oz. of goat cheese 1/2 red onion sliced thick 1/2 cup of jarred roasted red peppers couple of handfuls of arugula 2 tbsp. of balsamic vinegar 2 tsp. of oregano salt and pepper to taste
1. Season both sides of mushrooms and onions with extra virgin olive oil, balsamic vinegar, oregano and salt and pepper. 2. Heat grill pan over medium high heat. Place mushrooms and onions in the pan and grill for 3-5 minutes on each side. 3. In the meantime drizzle rolls with extra virgin olive oil and toast under the broiler for 2 minutes (watch them closely they toast fast!) Remove toasted rolls and rub generously with garlic clove. 4. Build sandwich - Layer arugula, onions, mushrooms, peppers and another handful of arugula. On the top roll spread with goat cheese. Pop it on the top and enjoy!!
