Basil Tomato Soup Supreme

Ingredients

Servings: 4 Change to: US Metric

(balsamic vinegar, basil, Chicken, cloves garlic, heavy cream, honey, hot sauce, Lea and Perrins, onion, parmesan, pepper, salt, tomatoes)

28 oz can tomatoes
1 1/2 oz fresh basil leaves
1/2 cup heavy cream
1 cup vegetable or chicken broth
1 tbsp honey
1/4 teaspoon salt
1/4 red pepper flakes
1/4 teaspoon pepper
1/4 teaspoon hot sauce
1 teaspoon lea and perrins
1 medium onion, chopped and lightly sauteed
4 cloves garlic, chopped and lightly sauteed
1 teaspoon balsamic vinegar

Optional: 3 tablespoons parmesan added last to small amount, blended then folded in

Directions


Puree the basil in 1/2 cup tomato sauce

Finely chop and lightly saute the garlic and onion adding a little salt at first to encourage a sweat rather than browning.

Puree into the basil.

Put the rest of the tomatoes in a large heavy saucepan.
Add all other ingredients to the pot, including the puree.

Bring slowly to a simmer, simmer for 25 minutes.

Let cool slightly, and then with an immersion blender, puree the whole mixture.

Serve warm to hot.

Or chill for later.


Optionally add the parmesan.

Garnish with chopped basil.
